Set the water
We bring the right temperature for what you picked.
Steep again
Most leaf gives four or five cups. The third is usually the best.
Before you ask
As long as you want. Most gongfu tables run about ninety minutes.
No. There is one very good hot chocolate and everything else is tea.
Everything we pour is sold by weight at the counter.
Deliberately. No music above conversation and no calls at the long table.
